Basil Pesto
This fresh basil pesto is quick to make and full of flavour. It uses fresh fragrant basil, garlic, parmesan cheese, pine nuts, olive oil, and a squeeze of fresh lemon juice and comes together in minutes.
Use it for crostini, salads, pasta, or as a finishing touch for roasted vegetables and grilled meats.
Ingredients
Makes approximately 1 cup of pesto.
- 2 cups of fresh basil leaves (If necessary you can substitute half fresh parsley)
- 2 cloves garlic
- 3/4 cup oil
- 1/4 cup parmesan cheese, grated
- 1/2 teaspoon salt
- Freshly ground black pepper
- 1/4 cup pine nuts, toasted (Or use other nuts)
Method
- Put all the ingredients into a blender and blend together until combined.
- Check the seasoning and adjust if necessary.
- Store in an airtight jar in the fridge.
