Beetroot Relish
This vibrant beetroot relish is bursting with flavour. It is deliciously tangy with a hint of sweetness, making it the perfect companion for burgers, cheese boards, and crackers. You can even enjoy it on it's own as a vegetable side.
It adds a delightful zing and a splash of rich colour to any dish. It is simple to prepare and easy to store, and it keeps beautifully for several months when sealed in sterilised jars.
Ingredients:
Makes approximately 600ml (2 large jars)
- 400g (14oz) beetroot, peeled and grated
- 180g (6oz) apple, peeled and grated
- 1/2 red onion, sliced
- 120g (4oz) white wine vinegar
- 120g (40z) balsamic vinegar
- 1/2 lemon juiced
- 1 teaspoon mustard
- 20g (2 tablespoons) oil
- 1 teaspoon cinnamon
- 1 teaspoon mixed spice
Method:
- Place all the ingredients in a medium sized pot and bring it to the boil over a medium heat.
- Once it's boiling, turn down the heat and simmer for about 30 minutes.
- Sterilise a few glass jars in preparation for storage.
- Spoon in the relish and seal the jars.
