These caramelised red onions are slow-cooked until they are soft, glossy and rich in flavour. Gently sweetened with a hint of tang from the addition of balsamic vinegar and the earthy aroma of fresh thyme, they’re a simple way to add depth and complexity to everyday dishes.

Perfect for salads, sandwiches, tarts, and plated savoury dishes, they bring both balance and bold flavour to your cooking.

Ingredients

Makes approximately 1/2 a cup.

  • 1 red onion, thinly sliced
  • Oil and butter for frying
  • 1 tablespoon balsamic vinegar
  • Fresh thyme
  • Pinch of salt
  • 2 teaspoons brown sugar

Method

  • Gently sweat the onion in oil and butter over a medium low heat until the onion is soft.
  • Add the thyme leaves.
  • Add the balsamic vinegar and brown sugar.
  • Stir until soft and shiny.

These caramelised red onions can be used warm or cool.
