Cranberry and Pistachio Fudge
This white chocolate fudge is as beautiful as it is delicious - it's creamy, sweet, and studded with jewel-like cranberries and crunchy pistachios.

Ingredients:
Makes approximately 30 bite-sized squares.
- 500g (17 oz) white chocolate
- 200g (6 oz) condensed milk
- 50g (1 3/4 oz) baileys liqueur
- 60g (2 oz) pistachios, crushed (or nut of your preference)
- 40g (1 oz) dried cranberries (or dried fruit of your choice)
Method:
- Grease and line a small loaf tin with baking paper.
- Melt the chocolate and condensed milk together in a small pot over a medium low heat until smooth and creamy. Keep stirring to avoid burning.
- Add the baileys liqueur and stir through.
- Take off the heat and stir in the nuts and fruit.
- Pour into the tin and leave to cool and set.
- Cut into squares and serve.
