Korean Inspired Ground Beef Bowl
This Korean style ground beef bowl is a fast, flavourful dish, perfect for busy weeknights or a quick easy meal.
Savoury, slightly sweet beef is served over fragrant garlic rice and paired with quickly sautéed vegetables. It is then finished with a creamy soy and sesame mayo that ties everything together. It's comforting, balanced, and packed with bold flavour in every bite.
Ingredients
Makes 4 portions
Beef Mince and Vegetable Ingredients
- 500g (1 lb) beef mince
- 2 tablespoons oil
- 100g (4 oz) teriyaki sauce
- 2 teaspoons soy sauce
- 3 teaspoons sesame oil
- 2 teaspoons brown sugar
- 100g (4 oz) mayonnaise
- 2 teaspoons fresh ginger, finely grated
- 2 cloves garlic, crushed
- 1 carrot
- 1 bunch bok choy
- 1 cup green beans or other stir-fry vegetables - can be fresh or frozen
- 2 stalks fresh chives or spring onion
- 1 tablespoon sesame seeds to garnish
Garlic Rice
- 40g (3 1/2 tablespoons) butter
- Drizzle of oil
- 1 clove of garlic, crushed
- 350g (12 oz) jasmine rice
- 2 1/2 cups (675g) water
- 1 teaspoon salt
Method
Garlic Rice
- Add the butter and oil to a large pot and melt over a medium heat.
- Add the garlic, and cook gently until fragrant.
- Once the butter has fully melted, add the rice and stir to completely coat it in the butter and oil.
- Pour in the water, and add the salt.
- Cover, and bring to a rolling boil.
- Turn off the heat and leave the rice covered to absorb the liquid.
- Keep the lid on until you're ready to serve.
Sauce and Mayonnaise
- Put the mayonnaise into a small bowl.
- Add 1 tablespoon of soy sauce and 1/2 teaspoon of sesame oil.
- Mix well and set aside.
- In a separate large bowl, add the teriyaki sauce along with the remaining soy sauce and sesame oil.
- Add the brown sugar, and stir until combined.
Vegetables
- Peel the carrot and cut into batons.
- Wash the bok choy and slice it.
- Top and tail the beans, and cut them into smaller pieces if preferred.
- Finely chop the chives.
- Sauté the carrots and beans in a frying pan over a medium high heat.
- Add half the garlic and half the ginger, and cook until the vegetables are fork-tender.
Beef Mince
- Add the oil to a large frying pan on a medium high heat.
- When hot, add the mince and fry, breaking it up as you go.
- Add half the garlic and half the ginger, and cook until the mince is cooked and the garlic and ginger are fragrant.
- Add the teriyaki sauce mixture, and cook until most of the sauce is absorbed.
Serving
- Serve a generous portion of garlic rice topped with the sautéed vegetables, teriyaki beef mince and then the soy sesame mayo.
- Garnish with chopped chives and sesame seeds.
