These mini filled rolls are perfect for parties, platters or lunchboxes. They're soft and fluffy, and can be filled with your choice of savoury fillings.

They're quick and easy to prepare, versatile and a crowd-pleasing favourite.

Ingredients:

Makes 8 rolls

  • 8 mini, soft rolls
  • Mayonnaise or aioli
  • Spread or dip (I used spicy capsicum dip)
  • Lettuce greens
  • 1 tomato, thinly sliced into 8 pieces
  • 16 slices cucumber
  • 4 slices salami
  • 4 slices mortadella
  • 1 slice of cheese, cut in 4

You can use any meat cheese or salad ingredients. Feel free to swap these out for something you have on hand.

Method:

  • Cut the rolls completely in half, keeping each pair together. They’ll look better if the top goes back on the same way it came off.
  • Spread a thin layer of mayonnaise or aioli onto the bottom half of the roll. Try to keep it on the bread without spilling over the edge.
  • Spread the top half with your chosen spread or dip.
  • Add some lettuce greens to the bottom half of the roll. Allow it to overlap the edge just a little for best visual appeal.
  • Add one slice of tomato to each roll.
  • Add two slices of cucumber to each roll.
  • Fold a slice of salami in half and then in half again to give it some depth. Do this for four of the rolls.
  • Fold a slice of mortadella in the same way, and add a piece to each of the remaining four rolls.
  • Add a square of cheese. For variety, you can add it to two salami rolls and two mortadella rolls.
  • Replace the top of the rolls. You can optionally add a skewer if you want to help keep it all together.
