Raspberry and Strawberry Coulis
This rich, deep coloured strawberry and raspberry coulis can elevate any dessert - from cheesecakes to ice-cream. It's packed with flavour, is visually striking, and is simple to make with only a handful of ingredients.
While strawberries and raspberries are a classic pairing and give a rich red coloured coulis, you don't need to limit yourself - you can use any berries you have on hand to make a coulis. Keep in mind that each berry will bring its own unique flavour profile to the coulis.
Ingredients:
Makes approximately one cup.
- 125g (4 oz) mixed raspberries and strawberries
- 50g (1 3/4 oz) castor sugar
- 50ml (1 3/4 oz) water
- 1/2 teaspoon vanilla essence
Method:
- Put the berries, castor sugar, water and vanilla into a small pot and bring to the boil.
- Once boiling turn down the heat and simmer until the berries are soft.
- Cool a little before blending with a stick blender (or similar) until a puree is created.
- Strain through a sieve for a smooth finish.
This can be served warm or cold. It keeps well refrigerated for about 5 days, or can be frozen in an ice-cube tray for easy defrosting.
