Sun-dried Tomato Pesto

Blended with garlic, parmesan, herbs, and a splash of olive oil, this sun-dried tomato pesto is perfect stirred through pasta, spread on sandwiches, or spooned over grilled vegetables.
It's quick to make and endlessly versatile - it's a permanent requirement in my fridge and keeps well for a couple of weeks.
Ingredients:
Makes 2 cups
- 1/2 cup fresh parsley
- 2 cloves garlic
- 3/4 cup oil
- 1/4 cup parmesan cheese
- 1/2 teaspoon salt
- Freshly ground black pepper
- 1 cup sun-dried tomatoes
- 1/2 cup toasted nuts (I used cashew nuts and almonds)
Method:
- Put all the ingredients into a blender and blend together until all combined.
